Healthy Spring Chicken Salad

Happy Spring my lovelies! Can you believe that it is already Spring? The flowers are blooming, the birds are chirping, the leaves are growing and turning green! But yet, I still have my winter chubbiness on me. I have been going through my recipes and found a recipe for a simple lemon pepper chicken and was thinking of what all I could make with a cooked chicken breast. I came up with dozens of recipes but one stood out the most. A Healthy Spring Chicken Salad complete with strawberries and cranberries!

My family loves a good salad, in fact we have one for dinner every week. What I love about salads is that it can be made to taste exactly how you want it! If you don’t like Feta, just switch out for a cheese that you do like. With this salad, the chicken and bacon can be prepared ahead of time and the onion can be sliced ahead of time as well. Without further ado, my Healthy Spring Chicken Salad recipe.

Healthy Spring Chicken Salad

Ingredients for the salad:

  • 7 cups Baby Spinach
  • 1/2 Red onion
  • 2-3 Grilled chicken
  • 10 Strawberries
  • 1/4 cup Feta Cheese
  • 6 slices Bacon
  • 1/4 cup dried cranberries
  • Lemon pepper seasoning

Ingredients for dressing:

  • 1 cup olive oil
  • 3 tbsp. apple cider vinegar
  • 1 tsp salt
  • 1 tsp dried basil
  • ½ cup frozen (or fresh) strawberries
  • 1/4 cup fresh lemon juice
  • ¼ cup water

Directions for making this delicious Healthy Spring Chicken Salad:

  • Season your chicken with the lemon pepper seasoning. Make sure to sprinkle it evenly. Grill your chicken on a George Foreman, in a pan or even bake until it is cooked through. Slice your chicken into small pieces, about 1 to 2 inches thick. Cook your bacon until it is nice and crispy and chop it up into small pieces.
  • Remove the hulls from the strawberries, then slice them and pat them dry. Remove the skin from your onion and slice into small pieces.
  • In a large bowl add all of the salad ingredients and toss well to combine.
  • Make your dressing. Simply take all of the dressing ingredients and place into a blender and blend well.
  • Pour dressing over the salad and top with feta cheese and dried cranberries.
