Once Halloween is over, baking season is on until the New Year in this house.

Don’t get me wrong, I already started baking a lot more than I did over the summer, but it’s just been warming up for the quickly approaching holiday season.  Which is rather exciting because I love baking different things for my neighbors, the kids teachers, family, and friends.

I don’t keep everything I bake! NO WAY, I love to cook and share.  My daughters teacher has already started asking me when I was going to start baking, lol.  I’m 99 percent sure my husband would kill me if I were to keep everything I baked at the house, lol.

These Apple Pie Spice Whoopie Pies were baked, tasted and sent to my neighbors house for an additional taste test lol.  We both loved them, and if you’re a fan of everything apple like me, then I am sure you’ll love them too!

Ingredients

  • Whoopie Pie:
  • 2 large eggs, at room temp
  • 1/2 C vanilla almond milk
  • 1 C  apple butter
  • 2 tsp Apple Pie Spice
  • 2 1/2 C flour
  • 1/2 C sugar
  • 1 1/2 baking powder
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 8 TBSP unsalted butter, room temp
  • Apple Spice Filling:
  • 1 C soft unsalted butter
  • 4 + C powder sugar
  • 4 TBSP heavy whipping cream
  • 2 tsp frozen apple juice concentrate

Instructions

Whoopie Pie:
    1. Preheat oven to 375 degrees.  Line cookie sheet with parchment paper.
    2. Whisk together eggs, almond milk, applesauce, apple pie spice.  Set aside.
    3. Add the dry ingredients, plus the butter and shortening together in a bowl with an electric mixer.
    4. Add in 1/2 of the egg & milk mixture. Beat for two minutes or until smooth at medium speed.
    5. Add in the remaining egg & milk mixture beating for another 1 minute.
    6. Using a large ice cream scoop, begin placing scoopfuls on the cookie sheet.
    7. Bake at 375 degrees for 14+ minutes or until the edges of the whoopie pies are lightly brown.
    8. Allow to cool completely on the cookie sheet.
Frosting:
  1. Cream the butter and powdered sugar until it looks light and creamy.
  2. If it doesn't cream, add several drops of the heavy whipping cream until it creams.
  3. Add frozen apple juice concentrate. Stir to blend throughout the entire bowl of frosting.
  4. Test to see if the icing can form and hold a stiff peak by taking a spoonful of frosting and turning the spoon upside down. If the frosting stays on the spoon, it is ready if not then....
  5. Add more powder sugar 1/2 C at a time.... mix well.
  6. Using a pastry bag with a large tip, fill 1/2 of the whoopie pie with the frosting, then add the second whoopie pie on top.

Oh boy these look delicious.My friend just brought me a big bag of apples she picked in her orchard this morning so this will be the perfect way to use some of them.

These sound so good! We had pumpkin whoopie pies with cream cheese frosting at (Canadian) Thanksgiving and they were so good – and these apple ones would be absolutely perfect for fall, too! Thanks for sharing!
