So what do you think?  St. Patrick’s Day Cream Cheese Filled Chocolate Cupcakes sound pretty yummy right?  I’m going to say yes, but what do you think?

Can you believe St. Patrick’s Day will be here in no time.  So what big plans does everyone have?  My husbands birthday is the day before St. Patrick’s Day and we normally don’t do much.  We stick around the house, dress in green, and have fun making some green food.  Last year we even made some green mashed potato  lol.  So much fun.  This year I have decided to try and make something a little more appealing.  To be honest, green mashed potato  lol.  My husband wouldn’t even eat them because they looked funny.  On another note the kids loved them.  This year I have decided to tone it down and not be so creative, lol.  On the menu this year is St. Patrick’s Day Cream Cheese Filled Chocolate Cupcakes.  

This year I wanted to make something yummy, and I already know these cupcakes are great!  This St. Patrick’s Day we will be making St. Patrick’s Day Cream Cheese Filled Chocolate Cupcakes and some other green treats.  Not to sure what else we will be having yet, when I figure it out I will be sure to share   Sounds pretty yummy right?  I think so.  If you’re looking for something yummy to make this St. Patrick’s Day remember adding green food coloring to your food is all it takes.  So make your favorite sweet treat, add some green food coloring, and enjoy.

St Patrick’s Day Cream Cheese-Filled Chocolate Cupcakes

Really the name says it all. St Patrick's Day Cream Cheese Filled Chocolate Cupcakes. The are a little cupcake from heaven, lol. I love how the cream cheese filling and icing tones down and adds an amazing flavor to the already amazing chocolate cupcakes. The green makes them super fun for everyone.

Ingredients

Cake

  • 3 cups All Purpose Flour
  • 2 cups Sugar
  • 2 teaspoons baking soda
  • 1/2 cup cocoa
  • 2 cups water
  • 2/3 cups cooking oil
  • 2 tablespoons vinegar
  • 2 teaspoons vanilla

Filling/Frosting

  • 8oz cream cheese
  • 1 large egg
  • dash salt
  • 1 cup chocolate chips
  • 5-6 green food coloring (add until you get desired color green)
  • 1/2 cup powder sugar

Directions

Cake
Step 1
Combine all the incredients to make your cupcakes and mix well until looks like a cupcake batter.
Step 2
Fill your cupcake papers about 1/2 of the way full.
Filling
Step 3
Combine all the ingredients for your filling. Mix unitil all ingredients are completely mixed.
Cupcakes
Step 4
You should have your cupcake batter ready to go in the oven. Before you place it in the oven drop about a teaspoon of the cream cheese filling into each cupcake. Try and make it somewhat rounded before you drop it in. Depending upon how much filing you put into each cupcakes you might need to make another batch of of icing.
Step 5
Bake at 350 degrees for about 15 minutes or until toothpick done. If you're not familiar with toothpick done, grab a wooden toothpick, place in the middle of the cupcake. If toothpick comes out without anything on it you're cupcakes are done.
Step 6
Once cupcakes are done let sit and completely cool. Fill a piping bag with your cream cheese frosting mix, using the tip you choose and add frosting as desired.

Note

How much of the cream cheese filling/icing do you want with your St Patrick's Day Cream Cheese Filled Chocolate Cupcakes? I personally don't putt a whole lot on the inside (my husband is very picky when I make these), but know a few people who would rather have the filling on the inside than the top. This is up to you, if you need to make more icing/filling you can cut the recipe in half or make a whole other batch. My sister-n-law always doubles up on the icing/filling. You can make this call once you have dropped your filling into the cupcakes.

Remember to have fun with the decorating process as well. Grab some fun rainbow-colored candy and add them to some of the cupcakes.
