Chicken Pot Pie RecipeWho doesn’t enjoy a nice home cooked Chicken Pot Pie!  Have you ever tried a Sweet Potato Chicken Pot Pie Recipe?  If not you should give it a try, it took a lot for me to try it to be honest I lost a bet.  There’s something about Pot Pie and Sweet Potato’s that just don’t mix well.  Well, my sister law made me try it and to my surprise it’s pretty yummy.

The Sweet Potato Chicken Pot Pie Recipe is awesome, if you don’t care for the Sweet Potato’s it’s okay.  Simply replace the sweet potato’s in the recipe with your favorite recipe and it’s still yummy.  We actually made this with regular old potato’s a few nights ago, and even the kids enjoyed it.  All four of them at the same time, with the same recipe.  That never happens in my house.  It’s something about it being their Aunt Marley’s recipe, what can I say she is an awesome cook and the kids favorite aunt, lol.  If you’re looking for something different and delicious to make for dinner, you might want to give the Southern Sweet Potato Chicken Pot Pie #Recipe a try.  If you try it be sure and come back and let me know what you thought about it, I love hearing your feedback.

Southern Sweet Potato Chicken Pot Pie #Recipe

Chicken Pot Pie with Sweet Potatoes, wow it's amazing. When I first got the recipe from my sister n law I truly did not think I was going to like it. Boy was I wrong, it's super yummy.. The receipe calls for slits in the top of the pie crust, I do a few small slits on the side because I love for it to get tall and bubbly, however it has made a mess you still have to allow the steam to escape. I slice tiny slits on the sides and throughout, it allows the steam to leave, but still makes the Pot Pie bubble up. Another awesome tip with the Chicken Pot Pie Recipe is, if you don't like it with Sweet Potato's just add your favorite potato. It comes out super yummy regardless of the type of potato. Give it a shot, let me know how it goes.

Ingredients

  • 2 cups cooked checken (shredded)
  • 1 cup chicken broth
  • 1 large egg (lightly beaten)
  • 1 small sweet potato (peel and dice)
  • 12 small onion (diced)
  • 2 tablespoons all-purpose flour
  • Salt and Pepper (the way you like it)
  • 9 " pie crust (make your own, or buy from the store)

Optional

  • 1/2 cup peas (frozen taste best (add more or less depending on your taste buds))
  • 1/2 cup corn (frozen corn works best)
  • 1/2 cup carrots (chopped and peeled (add more or less depending on taste buds))

Directions

Step 1
Preheat your oven to 425 degrees
Step 2
In medium saucepan bring broth to a boil. Add your sweet potato, carrot, onions, and salt and peeper to taste. Simmer for 12-15 minutes, until vegetables are soft.
Step 3
Grab a small cup, and whisk together the milk and flour.
Step 4
Once veggies are soft, slowly add the flour and milk mixture. Stir until the filling has thickened. Remove from heat and stir in the chicken, corn and peas.
Step 5
Add the pot fpie filling to a 9 inch pie plate. Cover with the pie crust, cut slits in the top. This will allow steam to escape. Grab a pastry brus, and paint wit the egg wash.
Step 6
Bake for about 30 minutes, until filling is hot and bubbly.

Note

Don't forget if the Chicken Pot Pie with Sweet Potatoe's Recipe doesn't sound good because of the Sweet Potato's  just replace them with your favorite potato.  It is a great receipe for adding different things too, also feel free to add to the filling of the pot pie, I love to get creative with the veggies I add.  Celery is always good added to any Pot Pie in my opinion
