I remember growing up my grandmother would always make her famous Butter Cake with Butter Icing. It was so yummy, and my mom has been stashing the recipe’s for years, lol. I know why she has done it. When all of us left home it was hard for her to let go. I think part of her was glad to have her time with my father, but she’s still mom and I cannot imagine how hard it is to let go and accept the fact that your children are all grown up. I know she gets a kick out of doing certain things for us. Cooking is one of them, you know nobody cooks better than mom and grandma.
Once my grandmother passed away, my mother took over making the desserts and dishes Granny used to make. I have been trying for years to get her to share the recipe’s with me. Well about twenty years later and she finally broke. Yepie, I made a Butter Cake the other day… Still not as good as Granny’s but with some practice I will have it down.
My husband loves to wait and have it for breakfast with a cup of coffee. Not sure, he says it’s great but then again he enjoys coffee. If you’re a coffee drinking it might be something worth trying.
Granny’s Old Fashion Butter Cake Recipe

Ingredients
- 3 cups All Purpose Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Salt
- 1/2 teaspoon Baking Soda
- 1 cup Butter (Softened)
- 1 1/2 cup Granulated Sugar
- 1/2 cup Brown Sugar
- 4 Eggs
- 1 teaspoon Vanilla Extract
Directions

| Prepare your baking pan. I use a 10 inch tube pan for my butter cakes. You can prepare in the baking pan of your choice, just remember to adjust cooking time or check often | |

| Preheat Oven to 325 | |
| Step 3 | |
| In a large mixing bowl combine butter, sugar, and brown sugar and cream. Mix until it’s a fluffy mixture. | |

| Now add eggs one at a time. Be sure and mix in each egg completely before adding the next | |
| Step 5 | |
| Mix in the vanilla extract. | |
| Step 6 | |
| Make sure everything is mixed together well and pour into cake pan. | |

| Place in oven on 325 degrees F for 1 hour or until done. You can test the cake by using a wooden toothpick. Place clean wooden toothpick in the center of the cake. If the toothpick comes out clean than your cake is finished. If it comes out with something on it, your cake needs a little more time. | |

Mmmmm. My grandmother would make a butter cake with lemon glaze over it. She would serve it piping hot with just a dollop of vanilla ice cream. My mouth is watering just thinking about it.
