view of cookies served in trayCookies, everyone loves cookies right!  Some of my favorite cookies to make with the kids are Gingerbread Cookies!  We always have so much fun, it hasn’t been until here recently we’ve started to actually make some look like Gingerbread Men, lol.  My oldest is now 14, so her and I take them a little more serious.  Santa is sure to love his cookies this year.

If you’re looking for an awesome Gingerbread Cookie Recipe, give ours a try.  It’s pretty time consuming, I honestly make the dough one day and we do the cookies the following day.  It’s almost too much for us to do in one day.  The little ones tend to end up on check out mode once the dough is made.  

Gingerbread Cookie Recipe

These are a great start to any gingerbread cookie. Always fun to add icing and decorate.

Ingredients

  • 3 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 3/4 teaspoons Ground Ginger
  • 3/4 teaspoons Ground Cinnamon
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Ground Cloves
  • 1/2 teaspoon Ground Allspice
  • 1/4 teaspoon Milled Black Pepper (Fresh)
  • 1/2 cup Brown Sugar (I use light but you can use either.)
  • 1 large Egg
  • 2/3 cups Unsulfured Molasses
  • 1/4 cup Vegetable Shortening (Room Temperature, so it's easy to mix.)

I like unsalted

  • 8 tablespoons Butter (Make sure butter is room temperature, not melted but soft and easy to work with.)

Directions

Step 1
Preheat oven to 350 degrees
Step 2
Sift together the flour, baking soda, ginger, cloves, cinnamon, allspice, salt and pepper. Place into a medium to large sized mixing bowl.
Step 3
Beat the butter and vegetable shortening together until they are mixed together very well. Using an electric mixer is best, however you'll have some great arms by mixing by hand, lol.
Step 4
Now add the brown sugar, mix together well until it becomes a light color
Step 5
Add egg and molasses and mix well.
Step 6
Now you'll gradually add the flour mixture, mixing well it should eventually turn into a stiff dough. This is where you'll really begin to feel those arm muscles working, lol.
Step 7
After you've made your dough, split it up into different sections and place in refrigerator for about 2-4 hours. You can actually leave your dough in the refrigerator for up to 24 hours to chill.
Step 8
Remove one section of the dough from the refrigerator, let sit until room temperature. This will keep dough from cracking while you're rolling it out.
Step 9
Now for the fun part. Lay out some flour where you'll be working. Place your dough on the lightly floured area and sprinkle a little flour on top of dough as well.
Step 10
Roll your dough out, be sure to check that your dough is not sticking to your work area. You will want to roll dough out to be about 1/8 of an inch thick.
Step 11
If for some reason dough begins to stick to the counter, you may need a little more flour. You can also get a butter knife or spatula and run underneath you dough.
Step 12
Get your cookies cutters. I love Gingerbread Men, but you can also use house, candy canes, bears, anything you want.
Step 13
Once your shapes are cut out, you'll begin to transfer them on a cookie pan about 1 inch apart.
Step 14
Repeat with the left over cookie dough, you may have to chill again. In that case grab you another section and begin to work with that while it chills.

Note

Making Christmas Cookie Icing is easy.  If you're wanting to add icing to you're Gingerbread Cookies follow the directions below.  Remember you can make different colors with food coloring.

Gingerbread Cookie Frosting

  • 1 1/2 Cups Powder Sugar
  • 4 or 5 Teaspoons Milk
  • 1 Drop Vanilla
  • 1 Tablespoon Soft Butter

Mix together, mix until you have spread consistency.  I always microwave everything until warm, add vanilla, and slowly add powder sugar until its a nice spreading consistency.  Now you can add food coloring for different colors, and have fun!

    What if you can’t buy unsulfured molasses is there anything else you can use? All the store has is blackstrap and it tasted really bitter.
